Granny Pringle’s Oat Cookies

4 oz gluten free self-raising flour (or add 1 ½ tsp baking powder to plain flour)     
4 oz oats
2 oz sugar                            
½ tbs maple syrup
4oz goats butter (or coconut oil)
½ tsp bicarb

  • Melt butter
  • Add sugar (& syrup)
  • Add bicarb
  • Combine all ingredients
  • Roll into balls (size of walnut  – about 24)
  • Flatten with fork onto two oiled trays

Medium oven for 15 mins

Alterations

I am a huge fan of playing with ingredients to suit your fancy.  You could add cinnamon, ginger, sultanas, chocolate chip – give it a go – get creative! Just write it down somewhere so you remember what works and what doesn’t

You can also:

  • Add more oats and less flour according to taste. Sometimes I pretty much only use oats, but just make sure what ever you take out in quantity of flour you add back in with oats.
  • Leave out the syrup completely – it can make the biscuits slightly more crispy if you leave it in, but not much.
  • Try coconut butter rather than goats butter

Super Power Your Kids

We all want our kids to be the very best they can be. To be happy and healthy as they grow into adulthood. And whilst we all know that diet is an important part of that growth, we have to carefully pick our battles with our children as well as prioritising our own time and resources.

If, in despair, you have ever googled “What should I be feeding my kids?” you may well have ended up feeling guilty, overwhelmed and confused by the conflicting nature of ‘expert’ opinion (meat/no meat, fat/low fat, protein but not too much…).   As part of my talk ‘Super Power your Kids’,  I explore some of that information in more detail and we ditch the guilt for starters.  For now, let’s look at some healthy snack ideas as a means to super charge our kids!

Evidence suggests that the more fruit and vegetables you eat, the healthier you are.

Amazingly – 7 portions of fruit and vegetables (5 vegetables, 2 fruit) a day lowers your risks of death from any disease by 42%. Even just eating between 1-3 portions reduces your risk by 14% (1).

Now, we are rightly sceptical of statistics of any kind. But really – those are extraordinary figures.  Not many (any?) drugs can claim such benefits. Sadly, there is also evidence suggesting 80% of young people eat less than 5 portions of fruit and vegetables a day (2). Equally, a significant number of children suffer from an inadequate supply of many vitamins, minerals and essential fatty acids (3).  The good news is that it is easy and inexpensive to increase  your child’s supply of all the above.

Note: Try to provide a rainbow of coloured foods because each colour represents a different health boosting property (e.g. red equals anti-oxidant, green equals anti-toxic) and organic when possible.

Savoury Snacks (not for kids at risk of choking from nuts/hard food)

  • Oatcake/Buckwheat cracker with hummus, guacamole, cottage cheese
  • Raw vegetable kebab/batons (e.g. carrot, red pepper and mange tout, cucumber) with above dips
  • Boiled egg with above dips
  • Small bowl of mixed nuts (try introducing walnuts/brazil nuts as well as cashews and almonds) with red grapes/chopped apples
  • Gluten free pizza base with home-made vegetable topping (grated under cheese to hide if necessary!)
  • Rice cakes with salmon and avocado

Bought Treats

  • Naked Bar (nuts/date bars)
  • Bounce (oats balls with added protein/spirulina)
  • Smooze fruit ice (coconut milk/cream and natural fruit, cane sugar)
  • Chia Pod (chia seeds soaked with coconut milk/cinnamon/mango)
  • Organix Goodies range (oat bars sweetened with fruit juice)

This is a very easy healthy pancake – substituting normal flour for half Doves Farm gluten free flour and half buckwheat flour and then filling it with all sorts of healthy berries, sprouted lentils, avocado, coconut cream and a home-made choc spread (recipe coming soon!).

Plum Cake

Plum Cake

A simple gluten free and can be dairy free cake. Just cause its healthy it doesn't mean you can eat three slices at once.....

  • 12 fresh plums or 300 gm tinned plums (drained)
  • 125 gm gluten free self-raising flour
  • 75 gm ground almonds
  • 1/2 teaspoon of baking powder
  • 100 gm palm sugar (try less!)
  • 125 gm goats butter (softened) – or coconut oil (softened)
  • 2 eggs
  • 1tsp vanilla/almond essence (optional)

Preheat oven to 150C

  • Plums – if tinned drain, chop and drain again. If fresh stone them, dice in small pieces
  • Mix together flour, almonds, baking powder
  • Cream butter and sugar in a different bowl and beat in eggs. Add almond essence and a bit of the flour mix.
  • Fold in rest of flour mixture
  • Add in plums
  • Grease tin and line the bottom, add in mixture and bake for around an hour (sometimes needs another 15 mins) – cover half way through.

1 Day Detox

All day long our bodies try and process toxic substances that they are just not evolved to deal with. Sometimes they need a bit of extra help - which is why I run detox days. During the day you may well discover a new respect for the miraculous work that our bodies, particularly our livers, do to protect us from toxins. We will look at simple things you can do to create the right environment for continual cleansing. Equally we look at the barriers in our lives that we feel prevent us from implementing those simple strategies.

What does a detox day involve?

Our detox days are free of food and filled with shots of super power juice, supplements, yoga, qi gong and talks on nutrition – a carefully designed combination to help with the detoxification process, keep your mind active and stave off hunger pains! It will give your body the chance to stop, drop, cleanse and repair. Further more it is an opportunity to see what a detox/fast is like and consider if you’d like to do one for longer.

Our events are  friendly, informative and light-hearted experiences. We take health seriously but fun and relaxation are better aids to optimal well being than terribly serious work!

We take up to 15 people for the day – to make sure you have the chance to ask questions and discuss any health concerns – so please book early to avoid disappointment.
